Independent winemakers, Spider Pig, sourced these grapes from four high lying sites in Stellenbosch & Elgin in order to craft this fine Sauvignon. The vines are rooted in granitic, sandstone & Bokkeveldscali soils, harvested on taste to capture the zippy green fruit & mineral character of this grape. All fruit is hand harvested, gentle pressing, lees rich long cold fermentation in stainless steel tank with a Sauvignon-specific yeast strain & bottled after five months to add depth to the wines.
