Catherine shows off her winemaking magic with this beauty. As an independent winemaker she has the flexibility to combine grapes from two regions to highlight the best attributes of a South African Chenin Blanc. The majority of the grapes come from the cool climate of Elgin which gives the wine its delicate structure and floral aromas. She has added in a small portion of old vine Chenin Blanc from Stellenbosch which layers in fruity flavours of pear and apricot. On top of that she has added some retrained winemaking magic, spontaneous fermentation in clay amphora, partial malolactic fermentation and a small portion aged in French oak to name a few. Described as 'the benchmark' by one critic, this is a must have if you want to understand why South African Chenin Blanc is 'a thing'.

Catherine is one of the original independent winemakers in South Africa, long before all the cool kids got onboard she was blazing a trail with her range of award winning wines. Her approach followed by many younger winemakers today, minimal intervention in the cellar which means the hard work is done in the vineyards.
